Procedure

Here is the in-detail procedure in the Indian recipes website of how to make Tandoori chicken at home easily in just a couple of hours and make your guests lick their fingers.

Heat The Spices In Oil

In medium flame, heat oil in a small pan and cook coriander, turmeric, cumin, garam masala, cayenne, and paprika for about 2 to 3 minutes until the spices start to release their aroma. Then let them cool completely.

Mix The Spices Well

Once the spices have been cooled down, whisk them well in yogurt and then mix in salt, ginger, and lemon juice.

Coat The Chicken

Cut deep slashes on the chicken and then coat it with the mixture. This will allow the mixture to go in every part of the chicken. Then cover the chicken and let it sit for at least an hour. But it is always preferred to let it sit for around six hours.

Prepare Grill

Prepare your grill to ensure that one side is much hotter over direct heat, the other side being cooler, not over direct heat. If you are using charcoal, leave one side of the grill without coals, so that you have a hot side and a cooler side. But if you are using a gas grill, just turn on one-half of the burners. You can use tongs to wipe the grill grates with a paper towel that has been soaked in vegetable oil.

Place The Chicken On The Grill

Take the chicken out of the marinate and remove the excess from its body. The chicken should be coated, but not gloppy. Then put the chicken leg pieces on the hot side of the grill and cover it. Cook 2-3 minutes before checking. Turn the chicken when it is brown (even a little bit charred) on all sides.

Cover And Cook

Shift chicken to the cool side of the grill. Cover it and cook for 20 minutes, up to 40 minutes (or longer) depending on the quantity and size of the chicken and the temperature of the grill. You will know that the chicken is done when its juices run clear. Let it rest for a minimum of 5 minutes before serving. It’s also great at room temperature or even cold the next day.

Serve with butter or plain naan, and Indian flatbread, or with Indian style rice, with yogurt-based raita or coriander chutney on the side.
